From my jobsite view, quarter-round beats shoe molding for gap coverage.
It just gives a smoother finish against uneven walls.

Yeah, quarter-round hides those wavy walls way better, just make sure you nail it tight.

Seriously, nailing it tight is basic stuff. @grace508's tip about the wall side nails is smart, but good luck hitting anything solid behind those wavy walls. I've had to fix gaps wide enough to fit a nickel after someone skipped the bracing. Just hold the quarter-round firm or you'll be redoing it next week.

Solid point from cora_carr73. I found putting nails near the wall side helps pull it flush. That extra step really helps with those stubborn gaps.
