Watched a buddy's old 870 action go from gritty to glass after a polish

He brought it in feeling like it was full of sand, and after about 45 minutes with some 600 grit on the rails and a dab of grease, the pump cycles smooth as anything now. Anyone have a go-to grease for pump guns that holds up in the cold?

Yeah, that initial break-in period is basically just doing the same thing with live ammo. Polishing just speeds up the process by hand. I use a little Flitz on a cloth wheel for the rails, gets rid of those rough tooling marks fast. For cold weather, a light coat of Mobil 1 synthetic grease stays put pretty well.

Full of sand" is how my first 870 felt out of the box (maybe I should've polished it before trying to blame my weak arms).

Wait, you actually polished the action on a brand new 870? That's a level of patience I just don't have. Most folks just work it a few hundred times and call it good. You went the extra mile right from the start.
