My friend told me air fryer fries are always bad, but I proved him wrong

We were at my place in Denver, and I pulled out my basket to make some fries. He said, "Those will never be crispy, just give up." I patted the potato sticks totally dry with a clean towel, tossed them with just a teaspoon of oil, and cooked them at 400 for 15 minutes, shaking halfway. They came out golden and perfect, and he had to admit they were good. What's the one thing people always get wrong about air frying that you've fixed?

Pat them completely dry with a towel, like you did. I used to just dab them and wonder why they steamed. Now I really press and get all that surface moisture off, which is the key to crispiness (not more oil, like a lot of people think).

My grandma in Tucson taught me to soak the cut fries in cold water for 30 minutes first to pull out the starch.

Thirty minutes? My grandma in Phoenix made us soak them overnight, like some kind of fry baptism. I can't imagine having the patience for just half an hour.
