Finally got my sourdough starter to double in under 8 hours

After three months of feeding this thing every morning, it finally hit that 2x rise mark yesterday afternoon. Has anyone else had a starter that took forever to get going, or did I just mess up the flour ratio for the first 10 weeks?

Dude that's awesome, congratulations. My first starter took like four and a half months to really get going, I honestly thought I was doing something wrong the whole time. Kept getting that little bit of rise but never the full double until one random Tuesday it just took off. It's so frustrating when you're feeding it every day and it feels like nothing is happening, but once it clicks it's a great feeling. Happy for you, seriously.

Ngl, terry_jones hit on something real with that random Tuesday thing. Same thing happened to me with my second sourdough starter. I had been babying it for weeks, changing flours, adjusting water temps, and then one day I forgot to feed it for like 30 hours, came back and it had tripled in size and smelled like ripe fruit. The yeast just decides when it's ready, not us. That moment when you finally see that full rise is pure relief, like all the wasted flour was worth it.
