Shoutout to the guy at the farmers market who asked about my sourdough crust

He pointed out my loaves looked a bit pale, and I realized I'd been skipping the ice cube trick for steam. My oven in my old apartment just doesn't trap heat well. I tried tossing three ice cubes into a preheated pan below my bread last weekend, and the crust got that perfect dark crackle. Anyone else have a go-to method for getting a good crust in a home oven that kinda sucks?

Hold up, you're writing off the whole idea because it didn't work once? My oven's ancient and it works fine if you do it right. You gotta preheat that pan for a solid hour, and use more than a couple ice cubes. It's not magic, it's just basic steam. What did you expect, a perfect loaf on the first try without tweaking anything?
