My sourdough starter went absolutely feral after I left it on the warm stove by mistake for 3 hours.

I came back to find it had climbed out of the jar and was dripping down the cabinet, but that wild energy made the best loaf I've ever baked, with a crust that actually crackled. Has anyone else had a kitchen disaster turn into a secret win?

Heard a chef say a little stress makes the best bread. Your starter just proved it.

Okay but come on, dylanmurray, it's bread. A little stress? Maybe. But we're not talking about a high-stakes job interview here. It's flour and water that sits on the counter. Feels like people are making this way deeper than it needs to be. The starter either works or it doesn't.
