Unpopular opinion: I used to think a pellet smoker was cheating
For two years I ran a stick burner in my backyard in Birmingham, waking up at 4am to babysit fire. I was proud of that smoke ring and bark. Last month a buddy brought over his Traeger for a cookout and I couldn't believe how good the ribs came out with almost no work. I spent the whole day hanging out instead of feeding logs. The flavor was 90% as good as my offset and the consistency was way better. Has anyone else made the switch and felt like they lost some street cred?

A buddy of mine from Nashville went through this exact thing last summer. He was running a stick burner for years and swore he'd never touch a pellet grill, called them the easy way out. Then his back went out and he couldn't stand by the smoker all day. He got a pellet smoker and now he won't shut up about how much more he actually cooks because it's not a whole day project. Said his brisket came out just as good and he didn't have to wake up at 4am to prove anything to anyone.
