I finally changed my recipe after a neighbor pointed out my mistake
My neighbor tried my chili last weekend and said it tasted bitter. Turns out I was burning the garlic every time by adding it too early in the pan. Now I toss it in during the last minute of cooking and the flavor is way better.

Wait, isn't mincing garlic actually better for getting that flavor into the dish though... I feel like crushed garlic just leaves you with big chunks that don't distribute as well.

Your neighbor did you a SOLID. The burnt garlic thing is actually super common because everybody and their mom thinks garlic goes in at the beginning with the onions. What people dont realize is that garlic burns way faster than onions, especially if the pan is hot. Glad you figured it out though. Next time try crushing the cloves with the flat side of your knife instead of mincing them. Crushed garlic releases a sweeter, more mellow flavor that is way harder to burn.

Crushed garlic has a milder bite but mincing does spread the taste more evenly though.
