My grinder's burr alignment took a full weekend to fix, not an hour.
Everyone online said it was a simple shim job, but getting my Baratza Vario to produce a truly even grind took me about 16 hours of trial and error. Has anyone else found the 'quick fix' guides to be wildly optimistic?

Those guides are written for people who already know what they're doing. The steps are simple if you have the right feel for it. Your weekend sounds like a learning process, not a flaw in the advice. Most people with some mechanical skill would get it done in the advertised time. It's a basic task once you understand the principles.
