Total grease fire in my kitchen last Wednesday

I was trying to fry chicken wings for game night. Oil temp got way too high, maybe 425. Dropped in some wet wings and poof. Huge flame shot up to the ceiling. Fire extinguisher made a mess everywhere. Took me an hour to clean up the powder. Anyone else have a close call with a grease fire?

Baking soda works fine if you catch it quick enough but it makes a massive mess too. That powder gets everywhere just like the extinguisher stuff does and you're still scrubbing counters and floors for an hour afterwards. Plus if the fire is already decent size you're dumping half a box in and hoping for the best. A proper fire blanket or a lid is way cleaner and stops the air just as fast. I keep a metal lid right next to the stove and never have to deal with powder fallout.

Baking soda is the real hero here, you probably already have it in your cupboard. That fire extinguisher powder gets into every crack and crevice, I swear it took me two days to get it all out of my stove vents. Next time just grab the box of baking soda and dump it on, it smothers the flames way faster than you'd think. Also a pro tip, never drop frozen or wet food into hot oil, that's basically asking for a fire show. Your wings should be patted bone dry before they even get near the pan. Glad you're okay though, kitchens can get scary fast when oil decides to act up.
