Hit 50 active ferments in my kitchen for the first time. It's a lot more jars than I thought.

Used to think a few jars was just a hobby. Seeing fifty active ones really shows how it takes over a space. You can't half-commit to this stuff.

Congrats on the new jar-based roommate situation. Charlie_ellis is right, you can't half-commit, but I'm starting to think you've fully committed to opening a small museum. At fifty jars, you're not running a kitchen anymore, you're running a lab that might start issuing its own safety reports. Better check your home insurance to see if "ferment overflow" is covered.

Remember my friend who tried to get into pickling after reading something from charlie_ellis? She filled her whole pantry with jars of beets. One night we heard a loud pop and found purple brine dripping from the shelf like a science experiment gone wrong. Her kitchen smelled like a vinegar factory for a week. She had to throw out half her towels. Now she sticks to two jars max.
