My kombucha scoby tried to escape the jar and I found it on the kitchen floor this morning

You said "scoby tried to escape," but that's actually the pellicle, the rubbery disc. The real scoby is the liquid culture itself. So your brew is probably fine, just rinse off the pellicle and put it back.

But if the pellicle is just a byproduct, why bother putting it back at all?
