Appreciation post: Always figured street food tours were kinda basic. Did one in Bangkok last week and the guide showed us how to read the crowds for the freshest stuff. Total mindset shift.

Yeah that part about reading the crowds is the real local insight. It's not just a long line, it's watching the wok fire. If the cook is constantly feeding it and the oil is super hot, that batch is moving fast. A short line at a grill where the coals are low and the meat has been sitting? Hard pass. Changes how you look at every stall.

I mean dylanfisher has a point but sometimes you just want food, you know? Idk if I'm watching the wok fire that close, maybe it's just me but I'll eat the sitting meat if I'm hungry enough.

Taipei night market taught me the busy stall rule.
