inAfter ruining three batches, I say forget the fancy airlocks.
Wondering if a cloth lid is really enough to keep everything out though. My main worry would be little bugs or dust getting in during those first few active days. Seems like risking mold for just saving a few bucks on a proper lid.

inJust realized I spent six months on one blog post...
My mom always says you can keep adding spices to the soup forever, but at some point you just have to serve it. I see this same thing with side projects or even cleaning the garage, you keep finding one more thing to do. Kevinp56 is right about hard deadlines, but for me it's about accepting that 90% done and out the door is better than 100% perfect and stuck in my head. I've ruined a few hobbies by over-preparing instead of just starting.

inPro tip: Never start sanding before 9 AM if you value peace with the neighbors.
Hand sanding early is KEY, learned that after ruining a table.

inShoutout to my mom for convincing me to try air fryer apple chips
My first try with apple chips ended up with one batch burnt and the next one still soggy... I was adjusting the time every five minutes like you said. The whole kitchen smelled like burnt sugar and I had to scrub the basket forever. Felt like such a waste of two apples and half an hour. Honestly just gave up and went back to buying the bagged ones from Trader Joe's.
