I always thought a stand mixer was a waste of money for cookies

Honestly, I used a hand mixer for years and my chocolate chip cookies were just okay, a bit flat. My sister gave me her old KitchenAid last month and I tried it for the same recipe. The butter and sugar creamed way better and the dough was thicker. The cookies came out taller and chewier, which is exactly what I wanted. Has anyone else had a basic tool change make that big a difference?

Maybe, but @cora975, people baked great bread for centuries without a scale.

Totally agree. Read a piece by a baker who said a good scale changed everything for them. They could finally get the amounts right, which made the bread turn out the same every time. Before that, they were just guessing with cups and it was always a little off. It wasn't about having fancy stuff, just the right basic tool for the job. The recipe was always good, but the tool let them actually follow it.
