Update: My brisket flat dried out completely during a cook-off in Austin

Honestly, my firebox temp spiked to 350 degrees for nearly an hour because I got distracted helping a friend. The flat turned into shoe leather, but the point was still decent. Anyone have a solid plan for managing a two-zone fire when you might get pulled away?

My smoke detector is basically a dinner bell at this point. It goes off if I look at the stove too hard. I've learned to cook with a fan on and a towel ready to wave at the ceiling. The neighbors probably think I'm trying to signal aliens. At least I know the batteries work.

Read a tip once about using a water pan in the cool zone as a heat sink for exactly this situation. It buys you some time if the fire spikes. Also, maybe set a loud timer on your phone for every 20 minutes to check the temp, even if you step away.
