I finally gave up on my old airlock setup for a simple cloth cover

I was convinced airlocks were mandatory for my hot sauce ferments, but after three batches got moldy anyway, I switched to a coffee filter and rubber band. The last batch, with Fresno peppers, bubbled for a full week with zero issues. Anyone else find airlocks to be more trouble than they're worth for some projects?

Reminds me of my buddy who had the same issue @aaronclark. He was fermenting jalapenos in a fancy airlock jar, but the seal on the lid was actually cracked. Mold got in through that tiny gap, ruined the whole batch. He switched to just using a plate weighed down in a crock, and it's been smooth sailing for months now.
