Unpopular opinion: those $100 wireless temp probes aren't worth the hype

Dude, the TW-2 is a beast. I've got about 30 cooks on mine and it's never dropped signal once, even when I'm inside my house on the other end. I ran a 15 hour brisket at 250 and the app was rock solid the whole time, no lag or disconnects. My buddy had the same issue with a cheap inkbird one, it would lose connection every time he walked into his kitchen. He switched to a ThermoPro too and hasn't complained since. People just need to realize you get what you pay for with these things, a lemon happens sometimes but the brand itself is legit.

The drysuit air dump trick that finally clicked for me

I always thought reaching over the shoulder was the only proper way to do it, but rolling the shoulder down makes way more sense now that I've tried it.

Can we talk about how much energy AI data centers REALLY use?

That number from Google's 2023 environmental report stuck in my head - they used something like 4.3 billion gallons of water that year just for cooling. It reminds me of how we take everyday stuff for granted, like how my neighbor waters his lawn every single day even when it rains, or how grocery stores keep all their doors wide open in summer with the AC blasting. We just don't think about where that water goes or what it costs. It's the same with these massive data centers in places like Arizona or California where water is already scarce, they just suck it up and use it like it's infinite. Honestly feels like we're repeating the same mistake we make with everything else, using resources without caring until they run out.

I used to think mise en place was just for TV chefs. Now I get it.

Totally agree once you see the difference it's hard to go back. I started doing a "first hour" setup where I just grab every ingredient I might need for the next round of tickets and it saves me so many trips to the walk in.

Hit 1,000 customer complaints logged in my shop last month - is that good or bad?

Started keeping a quick repair log and handing a copy to the customer every time I finish a job.
